  3. Can be refinished, sanded, and oiled for decades of use.

  6. Non-toxic, food-safe finishes (beeswax, mineral oil)

2. Bamboo

Why it's sustainable:

  1. Grows extremely fast with minimal water and pesticides.
  2. Very hard + durable.
  3. Considerations:
  4. Often glued together with adhesives—look for formaldehyde-free or low-VOC glues.
  5. Slightly tougher on knives than wood.

3. Solid Hardwood Slabs (Local or Reclaimed)

Why it's sustainable:

  1. Often made from a single piece of repurposed wood.
  2. Ultra durable and naturally antimicrobial.
  3. Considerations:
  4. Heavy and can warp if not cared for properly.

Avoid:

Plastic or recycled plastic → both shed microplastics and aren't durable.

Glass → ruins knives + dangerous if it chips.

Marble/stone → not a sustainably mined material, absorbs bacteria, too hard on knives, stains. best saved for serving charcuteries.
